Cut the crusts off the bread
and cut the slice into squares. Fry on the ghee
until golden. Remove from the pan. Boil the milk
with the cardamom seeds, sugar and saffron until the
sugar has dissolved.
Add the fried bread to the milk
and leave to soak for a few minutes. Remove the
bread with a slotted spoon. Mix the khoya in to the
milk and heat gently for 5 minutes.
Add the bread slices and
continue to cook, stirring, until the mixture
thickens, turning the slices over a few times. Add
the vanilla essence then remove from the heat and
leave to cool a little.
Spread carefully into a
greased baking dish and sprinkle with the nuts and
cherries. Leave to cool then cut into squares to
serve.
