Sohan Halwa
Ingredients

900g/2 lb sugar
-
1.2l/2 pts water
-
150ml/1/4 pt milk
-
225g/8 oz corn flour
(cornstarch)

few drops of red or yellow food
color
-
100g/4 oz ghee
-
225g/8 oz blanched almonds
-
100g/4 oz pistachios
-
50g/2 oz cardamom seeds,
crushed
Method:

Dissolve the sugar in half the
water and boil for 5 minutes. Remove from the heat
and strain through muslin (cheesecloth). Dissolve
the corn flour in the remaining water and add to the
syrup.

Cook over a medium heat until it begins to
form lumps then add the food color, stirring
continuously and adding a little ghee every time the
mixture starts sticking to the bottom of the pan
until all the ghee has been added and the mixture
leaves the sides of the pan.

Reserve a few almonds and
pistachios for decoration and add the remainder to
the mixture with the cardamom. Flatten into greased
dish, sprinkle with the reserved nuts and leave to
cool. Cut into shapes and store in an airtight
container.
