Ingredients

  • 225g/8 oz rice flour

  • 225g/8 oz sugar

  • 5ml/1 tsp ground cardamom

  • 30ml/2 tbsp ghee

  • 45ml/3 tbsp milk

  • 50g/2 oz sesame seeds

  • ghee for deep-frying


Method:

  1. Put the rice flour, sugar and cardamom into a bowl and rub in 30ml/2 tbsp of ghee. Add just enough milk to make a stiff dough and knead well.

  2. Cover with damp cloth and leave to stand for 20 minutes. Knead again then divide into small balls.

  3. Sprinkle the sesame seeds on the work surface and roll the balls into thin discs over the seeds.

  4. Heat the ghee and fry the pancakes until golden. Drain on kitchen paper and serve hot or cold.
