Ingredients

  • 450g/1 lb sweet potatoes

  • 100g/4 oz sugar

  • 120ml/4 fl oz water

  • 5ml/1 tsp ground cardamom

  • 225g/8 oz gram flour

  • salt

  • oil or ghee for deep-frying


Method:

  1. Boil the potatoes until tender then peel and mash. Boil the sugar and water to a syrup. Add the potato and cardamom and mix well.

  2. Divide the mixture into small balls. Add just enough water to the flour to make a thin batter and season with salt.

  3. Dip the potato balls in the batter and fry in the hot oil until golden. Drain and serve warm.
