Indian Recipes - Sweet Potato Bondas Indian Recipe
Ingredients
450g/1 lb sweet potatoes
100g/4 oz sugar
120ml/4 fl oz water
5ml/1 tsp ground cardamom
225g/8 oz gram flour
salt
oil or ghee for deep-frying
Method:
Boil the potatoes until tender then peel and mash. Boil the sugar and water to a syrup. Add the potato and cardamom and mix well.
Divide the mixture into small balls. Add just enough water to the flour to make a thin batter and season with salt.
Dip the potato balls in the batter and fry in the hot oil until golden. Drain and serve warm.
