Beef & Pork Recipes - Baked
Kebabs
Ingredients

5cm/2 in ginger root
-
1 unripe fig
-
15ml/1 tbsp salt
-
450g/1 lb steak, cubed
-
2 onions, chopped
-
45ml/3 tbsp ghee
-
2 potatoes, cubed
-
1 large tomato, chopped
-
1 sprig fresh coriander,
chopped
-
1 sprig fresh mint, chopped
-
10ml/2 tsp chili powder

3 eggs, beaten
Method:

Grind the ginger, fig and salt
to a smooth paste, mix it well into the meat and
leave to marinate for 2 hours.

Heat 15ml/1 tbsp ghee and fry
the onions until crisp and golden then grind them to
a paste. Add a further 15ml/1 tbsp of ghee and fry
the potatoes until golden.

Mix the onions, potatoes,
remaining ghee, tomato, coriander, mint and chili
powder into the meat and spread in an over proof
dish.

Pour the eggs on top of the
meat, cover tightly and bake in preheated oven at
200C/400F/gas mark 6 for 30 minutes until the meat
is cooked an the egg set.
