Beef with Cashews
Ingredients

250ml/8 fl oz/1 cup natural
(plain) yoghurt
-
5ml/1 tsp ground coriander
-
salt
-
450g/1 lb beef, cubed
-
45ml/3 tbsp oil
-
5ml1 tsp ground cardamom
-
5ml./1 tsp cumin seeds
-
3 onions, sliced
-
5cm/2 in ginger root, grated
-
2 green chilies, chopped
-
250ml/8 fl oz/1 cup water
-
25g/1 oz/1/2 cup cashew nuts,
ground

45ml/3 tbsp cream
-
juice of 1/2 lime
Method:

Mix the yoghurt , coriander and
a little salt. Rub into the meat and leave to
marinate for 1 hour.

Heat the oil and fry the
cardamom and cumin for a few seconds. Add the onions
and fry until golden. Add the ginger and chilies
then the meat, marinade and water.

Bring to the boil, cove and
simmer for about 12 hour until the meat is tender.
Stir in the cashews and cream, cover and simmer for
15 minutes.

Stir in the lime juice and
serve hot with rice and vegetables.
