Beef and Cauliflower Ghosht
Ingredients

8 cloves garlic
-
2.5 cm/1 in ginger root
-
900 g/2 lb beef, cubed
-
30 ml/2 tbsp ghee
-
2 onions, finely chopped
-
6 dried red chilies
-
6 black peppercorns
-
30 ml/2 tbsp ground coriander
(cilantro)
-
2.5 cm/1 in cinnamon stick
-
4 cloves
-
15 ml/ 1 tbsp desiccated
(shredded) coconut
-
1 small cauliflower, cut into
florets
-
1 tomato, chopped
-
2.5 ml/1/2 tsp ground turmeric
-
salt
-
15 ml/1 tbsp chopped fresh
coriander (cilantro)
Method:
-
Grind the garlic and ginger to
a fine paste. Rub the paste on to the meat and leave
to stand. Heat the ghee and fry the onions until
lightly browned.

Grind the chilies, peppercorns,
coriander, cinnamon, cloves and coconut to a fine
paste then stir them into the pan and fry for 2
minutes. Add the beef, cauliflower and tomato and
fry for 1 minute.

Stir in the turmeric and add
just enough water to cover the meat. Cover and
simmer for about 1 hour until the meat is tender,
stirring occasionally.

Sprinkle with salt to taste and
cook for a further 10 minutes. Garnish with
coriander and serve hot with chapattis.
