Madras
Ingredients

10 ml/2 tsp chili powder

10 ml/2 tsp ground coriander
(cilantro)

10 ml/2 tsp ground turmeric
-
1.5 ml/1/4 tsp ground ginger
-
salt and pepper
-
300 ml/1/2 pt/1 1/4 cups
coconut milk
-
60 ml/4 tbsp ghee
-
1 onion, chopped
-
3 cloves garlic, crushed
-
900 g/2 lb beef, cubed
-
300 ml/1/2 pt/1 1/4 cups beef
stock
-
5 ml/1 tsp lemon juice
Method:
-
Mix the spices, salt and pepper
to a paste with a little of the coconut milk. Heat
the ghee and fry the onion and garlic until golden.

Add the paste and fry for 3
minutes, stirring. Add the meat and stock, bring to
the boil, cover and simmer gently for 1 1/2 hours
until tender.

Stir in the remaining coconut
milk and the lemon juice and simmer for about 10
minutes until thickened.
