Beef & Pork Recipes - Beef Madras

Ingredients

  • 10 ml/2 tsp chili powder

  • 10 ml/2 tsp ground coriander (cilantro)

  • 10 ml/2 tsp ground turmeric

  • 1.5 ml/1/4 tsp ground ginger

  • salt and pepper

  • 300 ml/1/2 pt/1 1/4 cups coconut milk

  • 60 ml/4 tbsp ghee

  • 1 onion, chopped

  • 3 cloves garlic, crushed

  • 900 g/2 lb beef, cubed

  • 300 ml/1/2 pt/1 1/4 cups beef stock

  • 5 ml/1 tsp lemon juice


Method:

  1. Mix the spices, salt and pepper to a paste with a little of the coconut milk. Heat the ghee and fry the onion and garlic until golden.

  2. Add the paste and fry for 3 minutes, stirring. Add the meat and stock, bring to the boil, cover and simmer gently for 1 1/2 hours until tender.

  3. Stir in the remaining coconut milk and the lemon juice and simmer for about 10 minutes until thickened.
