Beef and Mushrooms
Ingredients

45 ml/3 tbsp ghee
-
1 onion, chopped
-
2 loves garlic, crushed
-
15ml/1 tbsp ground coriander
(cilantro)
-
10 ml/2 tsp garam masala
-
2.5 ml/1/2 tsp chili powder
-
30 ml/2 tbsp natural (plain)
Yoghurt
-
900 g/2 lb stewing heel, cubed
-
30 m/2 tbsp plain (all-purpose)
flour
-
450 ml/3/4 Pt/2 cups water
-
salt
-
225 g/8 oz mushrooms, sliced
-
30 ml/2 tbsp chopped fresh
coriander (cilantro)
Method:
-
Heat the ghee and fry the onion
and garlic until golden. Mix the spices to a paste
with the yoghurt.

Add the beef to the pan and fry
until browned on all sides. Add the spice paste and
flour and fry for 5 minutes, stirring to coat the
meat.

Add the water and salt, bring
to the boil then cover and simmer gently for 1 1/2-2
hours until the beef is almost tender, stirring
occasionally.

Add the mushrooms and cook for
a further 30 minutes until the beef is tender. Serve
sprinkled with coriander.
