Beef & Pork Recipes - Beef and Mushrooms

Ingredients

  • 45 ml/3 tbsp ghee

  • 1 onion, chopped

  • 2 loves garlic, crushed

  • 15ml/1 tbsp ground coriander (cilantro)

  • 10 ml/2 tsp garam masala

  • 2.5 ml/1/2 tsp chili powder

  • 30 ml/2 tbsp natural (plain) Yoghurt

  • 900 g/2 lb stewing heel, cubed

  • 30 m/2 tbsp plain (all-purpose) flour

  • 450 ml/3/4 Pt/2 cups water

  • salt

  • 225 g/8 oz mushrooms, sliced

  • 30 ml/2 tbsp chopped fresh coriander (cilantro)


Method:

  1. Heat the ghee and fry the onion and garlic until golden. Mix the spices to a paste with the yoghurt.

  2. Add the beef to the pan and fry until browned on all sides. Add the spice paste and flour and fry for 5 minutes, stirring to coat the meat.

  3. Add the water and salt, bring to the boil then cover and simmer gently for 1 1/2-2 hours until the beef is almost tender, stirring occasionally.

  4. Add the mushrooms and cook for a further 30 minutes until the beef is tender. Serve sprinkled with coriander.
