Beef & Pork Recipes - Beef Rolls
with Nut Stuffing
Ingredients

1/2 lb beef, cut into 5 cm/2 in
cubes

2.5 cm/1 in ginger root, grated
-
4 cloves
garlic, crushed
-
2.5
mi/1/2 tsp black pepper
-
90ml/6 tbsp oil
-
3 onions, chopped.
-
25 g/1 oz/1/2 cup pistachios
-
1/2 tbsp cashew nuts.
-
5 ml/1
tsp ground cumin
-
15ml/1 tbsp desiccated (shredded)

15 ml/1 tbsp lemon juice

3 onions, sliced

150 ml/1/4 pt/2/3 cup natural (plain) yoghurt

1 tsp garam
masala .

30 ml/2 tbsp chopped fresh coriander (cilantro)

1 green chilies, chopped
Method:

Mix the meat with the ginger,
garlic and pepper and leave to stand for at least 30
minutes, preferably overnight. Flatten the meat
slightly until the pieces are as thin as possible
without tearing. They should be about 5 x 9 cm/2 x 3
1/2in.

Heat the 1 tbsp of oil and fry
the chopped onions until browned. Crush the nuts an
add them to the a with the cumin and coconut and fry
for 1 minute, stirring. Remove from the heat and
stir in the lemon juice. Allow to cool slightly.

Spoon about 5 ml/1 tsp of the
mixture on to the strips, roll them tightly and tie
with string If you wish. Heat 60 mil 4 tbsp of oil
and fry the meat rolls for about 10 minutes until
browned, turning carefully.

Meanwhile, heat the
remaining on and fry the sliced onions until
browned. Stir in the yoghurt, garam masala,
coriander and chilies and simmer for 4-5
minutes. Pour over the browned meat, cover
and simmer for about 8-10 minutes before
serving.
