Beef and Tomatoes
Ingredients

45ml/3 tbsp oil
-
2 bay leaves
-
2 dried red chilies
-
2.5ml/1 in cinnamon stick
-
2 onions, finely chopped
-
2.5cm/1 in ginger root, minced
-
5 cloves garlic crushed
-
1 green chili, chopped
-
5ml/1 tsp ground coriander
-
2.5ml/1/2 tsp sugar
-
5ml/1 tsp ground cumin
-
5 tomatoes, skinned and chopped
-
450g/1 lb beef, cubed
-
120ml/4 fl oz/1/2 cup water
Method:
-
Heat the oil and fry the bay
leaves and chilies until they darken then remove and
discard them.

Add the cinnamon and onions and
fry until golden. Add the ginger and garlic then
green chili and spices and fry for a few seconds.

Add the tomatoes, sugar and
salt and fry until the fat appears on the surface.
Add the meat and fry until browned.

Add the water, bring to the
boil, cover and simmer for about 1 hour until the
meat is tender. Serve hot with rice and a vegetable
dish.
