Almonds
Ingredients

900g/2 lb beef, cubed
-
300ml/1/2 pt/1 1/4 cups natural
(plain) yoghurt
-
5ml/1 tsp ground turmeric
-
14 dried red chilies
-
salt
-
90ml/6 tbsp ghee
-
6 cloves
-
4 cinnamon sticks
-
4 cardamom pods
-
2.5ml/1/2 tsp caraway seeds
-
225tg/8 oz onions, sliced
-
2.5cm/1 in ginger root, finely
chopped
-
6 cloves garlic, finely chopped
-
300ml/1/2 pt/1 1/4 cups coconut
milk
-
100g/4 oz/1 cup ground almonds
Method:
-
Place the meat in a bowl, stir
in the yoghurt and turmeric and leave to marinate
for 1 hour. Grind the chilies to a fine paste with a
little sat.

Heat the ghee and fry the
cloves, cinnamon, cardamom, caraway and onions until
lightly browned. Stir in the ginger and garlic then
the ground chilies and fry until well browned.

Add the beef mixture, cover and
cook for about 30 minutes, stirring occasionally,
until the meat is half-cooked. Stir in the coconut
milk, cover and cook until the meat is tender.

Stir in the ground almonds and
simmer over a very low heat until the ghee appears
on the surface. Serve hot with parathas.
