Beef & Pork Recipes - Beef with Beetroot

Ingredients

  • 675 g/1 1/2 lb beef, cubed

  • 450 g/1lb beetroot (red beets)

  • 90 ml/6 tbsp oil

  • 3 onions, sliced

  • 2.5 cm/1 in ginger root, minced

  • 3 cloves garlic, crushed

  • 15 ml/1 tbsp ground coriander (cilantro)

  • 5 ml/1 tsp ground cumin

  • 5 ml/1 tsp ground turmeric

  • 750 ml/1 1/4 pts/3 cups water

  • 2.5 ml/1/2 tsp chili powder

  • 5 ml/ 1 tsp garam masala


Method:

  1. Trim the meat and trim and dice the beetroot. Heat 75 ml/5 tbsp of oil and fry the onions until golden. Add the ginger and garlic and fry until lightly browned. Stir in the coriander, cumin and turmeric and fry for 3-4 minutes, stirring.

  2. Add the meat and fry for about 15 minutes until lightly browned. Remove the meat from the pan. Stir in the beetroot and fry for 2 minutes, stirring, adding a little more oil if  necessary. Add the water and bring to the boil then simmer for 20-25 minutes.

  3. Return the meat to the pan with the chili powder, cover and simmer for about 1 hour  until the meat is tender, adding a little more water if necessary. Stir in the garam masala and simmer for about 10-15 minutes until the liquid has evaporated.
