Beef & Pork Recipes - Beef with Yoghurt

Ingredients

  • 45 ml/3 tbsp ghee

  • 900 g/2 lb beef, cubed

  • 2 green chilies, seeded and chopped

  • 2 onions, chopped

  • 225 g/8 oz tomatoes, skinned and chopped

  • 10 ml/2 tsp garam masala

  • 5 ml/1 tsp ground ginger

  • 2.5 ml/1/2 tsp cayenne

  • salt and pepper

  • 300 ml/1/2 pt/1 1/4 cups natural (plain) yoghurt


Method:

  1. Heat the ghee in an ovenproof pan and fry the beef until browned on al sides. Remove from the pan. Add the chilies and onions and fry for about 10 minutes until soft.

  2. Add the tomatoes and fry for about 5 minutes, stirring. Add the spices, salt and pepper. Stir the beef back into the pan.

  3. Gradually and the yoghurt, a spoonful at a time, stirring constantly. Cover tightly and bake in a preheated oven at 170C/325F/gas mark 3 for 1 1/2 hours until tender.
