Curry
Ingredients

60 ml/ 4 tbsp ghee
-
2 large onions, chopped
-
4 cloves garlic, crushed
-
2.5 cm/1 in ginger root,
crushed
-
450 g/1lb beef, cubed
-
2.5 ml/1/2 tsp ground turmeric
-
4 dried red chilies
-
2.5 ml/1/2 tsp ground coriander
(cilantro)
-
2.5 ml/1/2 tsp cumin seeds
-
2.5 mll1/2 tsp ground black
pepper
-
5 ml/ 1 tsp salt
-
225 g/8 oz okra
-
225 g/8 oz
tomatoes, skinned and mash
-
5 ml/1 tsp garam
masala
-
15 ml/1 tbsp
chopped fresh coriander (cilantro)
Method:
-
Heat 45 ml/3 tbsp of ghee
and fry the onions until browned. Add the garlic
and ginger and fry for 1 minute.

Add the beef, turmeric,
chilies, coriander, cumin seeds, pepper and salt
and simmer gently, adding a little water if
necessary, until the meat is browned.

Meanwhile heat the remaining
ghee and lightly fry the okra. When the meat is
brown, add the okra and tomatoes and simmer until
the meat is tender and reddish-brown, add a little
water if necessary.

Garnish with garam masala
and coriander and serve hot with chapatis.
