Beef & Pork Recipes - Coorgi Pork
Ingredients

1.5kg/3 lb pork
-
30 dried red
chilies, ground
-
12 onions
-
250ml/8 fl oz/1
cup water
-
15ml/1 tbsp cumin
seeds
-
5ml/1 tsp ground
turmeric
-
15ml/1 tbsp
coriander seeds
-
10ml/2 tsp
peppercorns
-
30ml/2 tbsp white
wine vinegar
-
4 boiled
potatoes, quartered
-
salt
Method:
-
Cut the pork into small pieces
and mix with the ground chilies. Leave to stand for
1 5minute then place in a pan.

Slice 10 of the onions and add
to the pork with the water. Bring to the boil, cover
and simmer for 1 hour until the meat is cooked.

Grind he remaining onions with
the cumin seeds, turmeric, coriander seeds,
peppercorns and wine vinegar and stir into the pan.

Simmer for a further 15
minutes. Add the potatoes and season to taste with
salt. Simmer until heated thorough. Serve hot with
vegetables, papadums and rice.
