Beef & Pork Recipes - Curried Beef with Aubergine

Ingredients

  • 45ml/3 tbsp oil

  • 1 cinnamon stick

  • 6 cardamom pods

  • 2 bay leaves

  • 2.5 ml/1/2 tsp black peppercorns

  • 1.5 ml/1 tsp cloves

  • 1 onion, grated

  • 4 cloves garlic, crushed

  • 1 cm/1/2 in ginger root. grated

  • 1 green chili, grated

  • 15ml/1 tbsp Basic Curry Powder

  • 1 large tomato, skinned and chopped

  • 900g/2 lb minced (ground) beef

  • salt

  • 1 medium aubergine (eggplant), cut into strips


Method:

  1. Heat the oil and fry the spices over a medium heat until slightly darkened. Add the onion, garlic, ginger and chili and fry until golden.

  2. Add the curry powder and fry for 1 minute. Add the tomato and fry for 1 minute.

  3. Stir in the meat and salt, cover and simmer for 10 minutes, stirring occasionally, Stir in the aubergine, cover and cook for 7-10 minutes, stirring occasionally.

  4. Serve hot with rice or chapattis, dal and chutney.
