Beef & Pork Recipes - Dry Beef Curry

Ingredients

  • 900g/2 lb lean stewing beef, cubed

  • 2.5ml/1/2 tsp ground turmeric

  • 15ml/1 tbsp cider vinegar

  • 30ml/1 tbsp oil

  • 6 cloves garlic, finely chopped

  • 1 large onion, finely chopped

  • 1 green chili, finely chopped

  • 5mm/1/4 in fresh root ginger, finely chopped

  • 15ml/1 tbsp Basic curry Powder

  • 15ml/1 tbsp desiccated (shredded) coconut

  • salt

  • 1 large tomato, chopped


Method:

  1. Mix the meat, turmeric and cider vinegar and leave to stand for 10 minutes. Heat the oil and fry the garlic, onion, chili and ginger over a medium heat until lightly browned.

  2. Add the curry powder and coconut and fry for 3-5 minutes, stirring occasionally, until the oil rises to the surface. Stir in the meat mixture, salt and tomato and fry over a high heat for 3-4 minutes.

  3. Transfer to a casserole, dish cover with foil and the lid and bake in a preheated oven at 200C/400F/gas mark 6 for 30 minutes. Reduce the heat to 150C/300F/gas mark 2 and bake for a further 15 minutes until the meat is tender.

  4. Serve hot with rice or chapattis, a vegetable dish and salad.
