Portuguese-style Spicy Pork
Ingredients

15ml/1 tbsp cumin
seeds

10ml/2 tsp black
mustard seeds

5ml/1 tsp ground
turmeric

2.5ml/1/2 tsp
black peppercorns

5ml/1 tsp ground
cinnamon

5ml/1 tsp
cardamom pods

2.5ml/1/2 tsp
cloves

2.5ml1/2 tsp
grated nutmeg

1 onion, chopped
-
8 cloves garlic,
chopped
-
2.5cm/1 in ginger
root, chopped
-
5ml/1 tsp paprika
-
6 dried red
chilies soaked in 30ml/1 tbsp cider vinegar

45ml/3 tbsp
mustard oil
-
250ml/8 fl oz/1
cup cider vinegar
-
15ml/1 tbsp brown
sugar
-
salt
-
1.5kg/3 lb lean
pork, cubed
Method:
-
Dry roast the spices in a pan
until lightly colored then grind them together with
the onion, garlic and ginger, paprika, chilies and
soaking vinegar.

Blend in 30ml/2 tbsp of the
oil, the cider vinegar, sugar. Add the pork, stir
well then cover an marinate overnight in the
refrigerator.

Heat the remaining oil and fry
the meat over medium heat until browned. Pour in the
marinade and stir for 5 minutes until the oil
appears on the surface.

Reduce the heat, cover and
simmer gently for 1 hour until the meat is tender.
Serve hot with plain rice, vegetables and papadums.
