Ingredients

60ml/4 tbsp ghee
-
450g/1 lb beef, cubed

1 large onion, sliced
-
2.5cm/1 in ginger root, chopped
-
10 cloves garlic, chopped
-
3 dried red chilies, coarsely
chopped

5ml/1 5sp ground turmeric
-
3 cinnamon stick
-
2 cardamom pods
-
4 cloves
Method:
-
Heat half the ghee to smoking
point then add the meat and stir well. Stir in all
the remaining ingredients, cover and simmer over a
very low heat for 45 minutes.

Add the remaining ghee and
simmer, uncovered, until the meat is reddish-brown.
Serve hot with rice and salad.
