Beef & Pork Recipes - Kofta Curry

Ingredients

  • 4 green chilies

  • 2.5 cm/1 in ginger root

  • 3 onions, thinly sliced

  • 8 peppercorns

  • 15ml/1 tbsp chopped fresh coriander (cilantro)

  • 675 g/1 1/2 lb minced (ground) beef

  • 1 egg

  • salt

  • oil or ghee for deep-frying

  • 15 ml/1 tbsp ghee

  • 10 ml/1 tsp ground coriander (cilantro)

  • 5 ml/1 tsp ground turmeric

  • 5ml/1 tsp ground cumin

  • 5 ml/1 tsp chili powder

  • 1 cinnamon stick

  • 2 black cardamom pods

  • 3 cloves

  • 3 cloves garlic, thinly sliced

  • 1 sprig fresh curry leaves

  • 1 sprig fresh coriander ( cilantro) leaves

  • 1 tomato, chopped

  • 600ml/1 pt/2 1/2 cups water


Method:

  1. Puree the chilies, ginger, 1 onion, the peppercorns and coriander to a paste in a blender or food processor. Mix with the beef, egg and salt and shape into egg-sized balls.

  2. Heat the oil or ghee and deep-fry the koftas until browned. Drain and set aside. Heat the ghee and fry the remaining onions and spices for 5 minutes adding salt to taste.

  3. Add the tomato and cook until the ghee appears on the surface, adding a little water if necessary.

  4. Add the koftas and water and simmer until the gravy thickens. Serve hot with rice and a vegetable dish.
