Kofta Curry
Ingredients
4 green chilies
2.5 cm/1 in ginger root
3 onions, thinly sliced
8 peppercorns
15ml/1 tbsp chopped fresh
coriander (cilantro)
675 g/1 1/2 lb minced (ground)
beef
1 egg
salt
oil or ghee for deep-frying
15 ml/1 tbsp
ghee
10 ml/1 tsp ground coriander
(cilantro)
5 ml/1 tsp ground turmeric
5ml/1 tsp ground cumin
5 ml/1 tsp chili powder
1 cinnamon stick
2 black cardamom pods
3 cloves
3 cloves garlic, thinly sliced
1 sprig fresh curry leaves
1 sprig fresh coriander (
cilantro) leaves
1 tomato, chopped
600ml/1 pt/2 1/2
cups water
Method:
Puree the chilies, ginger, 1
onion, the peppercorns and coriander to a paste in a
blender or food processor. Mix with the beef, egg
and salt and shape into egg-sized balls.
Heat the oil or ghee and
deep-fry the koftas until browned. Drain and set
aside. Heat the ghee and fry the remaining onions
and spices for 5 minutes adding salt to taste.
Add the tomato and cook until
the ghee appears on the surface, adding a little
water if necessary.
Add the koftas and water and
simmer until the gravy thickens. Serve hot with rice
and a vegetable dish.
