Marinated Beef
Ingredients

300 ml1/2 pt/l Vt cups natural
(plain) yoghurt
-
2.5 cml1 in ginger root minced

4
cloves garlic, crushed
-
5 ml/1 tsp ground cumin
-
5 ml/1 tsp ground cardamom
-
5
ml/1 tsp ground cloves
-
30 ml/2 tbsp chopped fresh
coriander (cilantro)
-
salt
-
450 g/1lb beef, cubed
-
45 ml/3
tbsp oil
-
2 cloves
-
2 onions, sliced
-
2 green chilies, chopped
-
pinch of ground cinnamon
-
5
mill tsp dried fenugreek leaves
-
250 ml/8 fl oz/1 cup water
Method:
-
Mix the yoghurt with the
ginger, garlic, cumin, cardamom, cloves,
coriander and salt, spread over the meat and
leave to marinate overnight.

Heat the oil and fry the
cloves until they darken. Add the onions and fry
until
golden. Add the chilies, cinnamon and fenugreek and
fry for a few seconds.

Add the mat,
marinade and water, cover and simmer for about 1 1/2
hours until the meat is tender.
