Curry
Ingredients

60ml/4 tbsp ghee
-
1 onion, chopped
-
4 cloves garlic,
crushed
-
seeds from 4
cardamom pods
-
1/2 cinnamon
stick
-
4 cloves
-
5ml/1 sp ground
ginger
-
2 green chilies,
chopped
-
900g/ 1 lb
boneless pork, cubed
-
juice of 1 lemon
-
5ml/1 tsp grated
lemon rind
-
5ml/1 tsp grated
orange rind
-
5ml/1 tsp salt
-
300ml/1/2 pt/1
1/4 cups water
-
30ml/2 tbsp
chopped fresh coriander
Method:
-
Heat the ghee and fry the onion
and garlic until golden. Grind the cardamom seeds,
cinnamon and cloves then add to the pan with the
ginger and chilies and fry for 2 minute, stirring.

Add the pork and fry until well
browned on all sides. add the lemon juice, lemon and
orange rinds, salt and water, bring to the boil then
simmer gently for 1 1/2 hours until the pork is
tender.

Serve garnished with the
coriander.
