Palak Beef
Ingredients

225g/8 oz spinach, chopped
-
4 green chilies
-
45 ml/3 tbsp ghee
-
5ml/1 tsp sugar
-
450 g/1lb beef, cubed
-
150 ml/1/4 pt/2/3 cup milk
-
5ml/1 tsp chili powder
-
salt
-
10 ml/2 tsp ground coriander
(cilantro)
-
55ml/1
tsp ground turmeric
-
250 ml/8fl oz/1 cup water
-
10ml/2 tsp garam masala
Method:
-
Boil the spinach and chilies
for a few minutes in a little water until tender.
Drain and leave to cool then grind to a paste.

Heat the ghee and fry the sugar
for minute. Stir in the beef and fry for 2 minutes.
Add the milk and fry for 3 minutes. Stir In the
chili powder, salt coriander and fry until the meat
is well browned.

Add the spinach paste and
turmeric and fry for 5 minutes. Add the water and
simmer until the meat is cooked and the water has
evaporated.

Stir In the garam masala, cover
and simmer very gently until the meat is very tender
and the spices have permeated thoroughly. Serve hot
with chapattis.
