Pork Chops with Almond Sauce
Ingredients

4 cloves
-
4 cardamom pods
-
5ml/1 tsp black
peppercorns
-
1/2 cinnamon
stick
-
75ml/5 tbsp ghee
-
2 onions, sliced
-
2.5cm/1 in ginger
root, chopped
-
4 pork chops
trimmed
-
600ml/1 pt/1 1/2
cups milk
-
5ml/1 tsp ground
turmeric
-
salt
-
50g/2 oz/1/2 cup
ground almonds
-
150ml/1/4 pt/2/3
cup double cream
Method:
-
Dry roast the cloves, cardamom
, peppercorns and cinnamon until lightly colored the
grind. Heat 60ml/4 tbsp of ghee and fry the onions,
ginger and spices for 10 minutes until soft then
remove from the pan.

Heat the remaining ghee and fry
the chops until browned on both sides. stir the
milk, turmeric and salt into the onion mixture, pour
over the chops bring to the boil, cover and simmer
for about 45 minutes until the chops are tender and
the sauce is thick, basting the chops occasionally
during cooking.

Mix together the almonds and
cream and leave to stand for 30 minutes. Remove the
chops from the pan and boil the sauce until reduced
to a thick consistency.

Stir in the almond cream,.
return the chops to the pan and simmer for 10
minutes, making sure the chops are covered in the
sauce.
