Beef & Pork Recipes - Pork Chops with Plums

Ingredients

  • 120ml/4 fl oz/1/2 cup lemon juice

  • 3 cloves garlic, crushed

  • 10ml/2 tsp ground ginger

  • 5ml/1 tsp paprika

  • 5ml/1 tsp chili powder

  • 4 pork chops, trimmed

  • 450g/1 lb plums in syrup

  • salt


Method:

  1. Mix half the lemon juice with the garlic, ginger paprika and chili powder. Place the chops in a dish and pour over the marinade. Cover and leave to marinate overnight.

  2. Rib the plums through a sieve and place the puree in a heavy based pan with the remaining lemon juice and salt. Bring to the boil and simmer until thick.

  3. Brush over the chops and grill for about 20 minutes until cooked through and glazed on both sides, basting with the marinade when you turn the chops.
