Pork Dopiaza
Ingredients

900g/2 lb onions
-
120ml/4 fl oz/1/2
cup ghee
-
30ml/1 tbsp lemon
juice
-
750g/1 1/2 lb
boneless pork, cubed
-
10ml/2 tsp ground
coriander
-
10ml/1 tsp ground
turmeric
-
5ml/1 tsp
fenugreek seeds
-
5ml/1 tsp salt
-
5ml/1 tsp chili
powder
Method:
-
Thinly slice half the onions
and chop the remainder. Heat the ghee and fry the
chopped onions with the lemon juice for about 20
minutes until golden and fry, stirring frequently.

Remove from he pan. Fry the
pork in the same pan until browned on al sides then
remove form the pan. Add the sliced onions,
coriander, turmeric, fenugreek, salt and chili
powder to the pan and fry for about 10 minutes until
the onions are soft.

Return the pork to the pan with
a little water, cover and simmer gently for 1 hour
until tender. Stir in the fried onions and simmer
for 15 minutes until the sauce is thick, stirring
continuously.
