Beef & Pork Recipes - Pork Korma

Ingredients

  • 60ml/4 tbsp ghee

  • 3 onions, thinly sliced

  • 4 cloves garlic, chopped

  • 1.5ml/1/4 tsp ground cumin

  • 1 cinnamon stick

  • 3 bay leaves

  • 10 cloves

  • 6 cardamom pods

  • 450g/1 lb pork, cubed

  • 300ml/1/2 pt/1 1/4 cups natural (plain) yoghurt

  • 4 large tomatoes, skinned and chopped

  • 2.5ml/1/2 tsp black pepper

  • salt


Method:

  1. Heat the ghee and fry the onions and garlic until soft. Add eh spices and fry until browned. Add the meat and fry until browned.

  2. Stir in the yoghurt, tomatoes, pepper and salt and simmer for about 20 minutes until the meat is tender and the sauce is thick. Serve hot with pilau rice and dal.
