Pork Sorpotel
Ingredients

900g/2 lb fatty
pork
-
225g/8 oz pigs'
liver
-
900ml/1 1/2
pts/3/3/4 cups water
-
10 dried red
chilies
-
10ml/2 tsp ground
turmeric
-
10ml/2 tsp cumin
seeds
-
16 black
peppercorns
-
5cm/2 in cinnamon
stick
-
14 cloves
-
18 cloves garlic,
crushed
-
2.5cm/1 in ginger
root, chopped
-
3 onions, chopped
-
5ml1/ tsp
tamarind concentrate
-
5ml/1 tsp white
wine vinegar
-
5ml/1 tsp salt
-
5ml/1 tsp sugar
Method:
-
Cook the pork and liver in the
water for about 1 hour until tender. Drain and leave
to cool then cut into small cubes.

Grind the spices to a smooth
paste and mix wit the pork and liver. Cook over a
gently heat for about 10 minutes.

Add the onions, tamarind, wine
vinegar, salt and sugar and simmer until the gravy
is thick. Serve hot with rice, vegetables and dal.
