Potato and Mince
Ingredients

45 ml/3 tbsp oil
-
2 onions, finely chopped
-
2 cloves garlic, finely chopped
-
450 g/1 lb minced (ground) beef
-
4 tomatoes, skinned and chopped
-
15 ml/1 tbsp tomato puree
(paste)
-
2.5 ml/1/2 tsp dried oregano
-
5 ml/1 tsp dried basil
-
2 green chilies, seeded and
chopped
-
50 ml/2 fl oz/3 1/2 tbsp water
-
salt and pepper
-
6 potatoes
-
30 ml/2 tbsp butter
-
30 ml/2 tbsp milk
-
25 g/1
oz/1/4 cup grated cheese
Method:
-
Heat the oil and
fry the onions until soft. Add the garlic and fry
for 1 minute. Add the mince and fry until browned.

Add the tomatoes,
tomato puree, oregano, basil, chilies and water and
season with salt and pepper. Cover and simmer for
about 20 minutes until the meat is cooked.

Meanwhile, boil
the potatoes until tender then drain, peel and mash
them with the butter, milk and half the cheese.
Season with salt and pepper.

Spoon the mince
into an ovenproof dish, spread the potatoes on top
and sprinkle with the remaining cheese.

Bake in a
preheated oven at 200C/400G/gas mark 6 for about 15
minutes until the top is golden brown.
