Kebabs
Ingredients
45 ml/3 tbsp ghee
1 onion, minced
2 cloves garlic, crushed
1 cm/1/2 in ginger root. minced
4 dried red chilies
5 ml/1 tsp ground coriander
(cilantro).
5 ml/1 tsp ground turmeric
2.5 ml/1/2 tsp ground cumin.
2.5 ml/1/2 tsp garam masala
pinch of ground cinnamon
pinch of ground cardamom
pinch of ground cloves
2.5 ml/1/2 tsp ground almonds
15 ml/1 gram flour
450 g/1 lb minced (ground) beef
salt
15 ml/1 tbsp coconut cream.
150ml/1/4 pt/2/3 cup natural
(plain) yoghurt
5 ml/1 tsp chopped fresh mint
Method:
Heat half the ghee and fry the
onion garlic, ginger and chilies for 3-4 minutes.
Stir in the spices and almonds and cook over a low
heat for 5 minutes.
Stir in the flour beef salt and
coconut cream and cook for 10 minutes. Remove form
the pan and grind the mixture to a paste.
Blend the yoghurt, mint and
salt to taste. Shape spoonfuls of the meat mixture
into balls a and place 2.5cm/1/2 tsp of yoghurt in
the centre.
Shape the meat around the
yoghurt to form flat, round cutlets. Heat the
remaining ghee and fry the cutlets until golden
brown. serve hot with onion rings and salad.
