Kebabs
Ingredients

675g/1 1/2 lb
minced beef
-
100g/4 oz/2/3 cup
yellow split peas
-
2.5cm/1 in ginger
root
-
3 cloves garlic
-
5ml/1 tsp ground
coriander
-
5ml/1 tsp garam
masala
-
1 dried red chili
-
1 egg
-
1 hard-boiled egg
-
1 onion
-
2 green chilies
-
25g/1 oz/1/4 cup
blanched almonds
-
5ml/1 tsp chopped
fresh coriander
-
45ml/3 tbsp ghee
Method:
-
Place the beef and split peas
in a pan cover with water bring to the boil, cover
and simmer for about 1 hour until tender and fry.

Grind the ginger, garlic
coriander, garma masala and chili to a paste and mix
into the meat with the raw egg. Shape into balls or
flat patties.

Coarsely chop the remaining
ingredients and mix together. Put a little of the
chopped mixture in the centre of each kebab.

Heat the ghee and fry the
kebabs until richly browned. Serve with onion rings
and slices of lime.
