Beef & Pork Recipes - Shami Kebabs

Ingredients

  • 675g/1 1/2 lb minced beef

  • 100g/4 oz/2/3 cup yellow split peas

  • 2.5cm/1 in ginger root

  • 3 cloves garlic

  • 5ml/1 tsp ground coriander

  • 5ml/1 tsp garam masala

  • 1 dried red chili

  • 1 egg

  • 1 hard-boiled egg

  • 1 onion

  • 2 green chilies

  • 25g/1 oz/1/4 cup blanched almonds

  • 5ml/1 tsp chopped fresh coriander

  • 45ml/3 tbsp ghee


Method:

  1. Place the beef and split peas in a pan cover with water bring to the boil, cover and simmer for about 1 hour until tender and fry.

  2. Grind the ginger, garlic coriander, garma masala and chili to a paste and mix into the meat with the raw egg. Shape into balls or flat patties.

  3. Coarsely chop the remaining ingredients and mix together. Put a little of the chopped mixture in the centre of each kebab.

  4. Heat the ghee and fry the kebabs until richly browned. Serve with onion rings and slices of lime.
