Beef & Pork Recipes - Sweet and Sour Beef

Ingredients

  • 30 ml/2 tbsp oil

  • 2 onions, chopped

  • 2 green chilies, seeded and chopped

  • 4 curry leaves, torn

  • 2.5 cm/1 in ginger root, minced

  • 4 cloves garlic, crushed

  • 5 ml/1 tsp ground roasted cumin

  • 1.5 ml/l/4 tsp ground turmeric

  • 2.5 ml/1/2 tsp ground black pepper

  • 450 g/1 lb minced (ground) beef

  • 2 tomatoes, skinned and chopped

  • 5 ml/1 tsp wine vinegar

  • 120 ml/4 fl oz/1/2 cup water

  • 10 ml/2 tsp sugar

  • 15 ml/1 tbsp cream

  • 15 ml/1 tbsp chopped fresh coriander (cilantro)


Method:

  1. Heat the oil and fry 1 onion until golden. Add the other onion, the chilies, curry leaves, ginger and garlic and fry for 5 minutes.

  2. Add the spices and fry for a few seconds. Add the beef and fry until lightly browned and the moisture has evaporated.

  3. Add the tomatoes, wine vinegar and water, bring to the boil, cover and simmer for 15 minutes.

  4. Stir in the sugar and cream, season to taste with salt, cover and simmer for a further 10 minutes. Garnish with coriander and serve hot with rice and aubergine.
