Boti Kebabs
Ingredients

120ml/4 fl oz/1/2
cup natural (plain) yoghurt

1 onion, chopped
-
2.5cm/1 in ginger
root, chopped

3 cloves garlic,
chopped
-
5ml/1 tsp poppy
seeds
-
15ml/1 tbsp
chopped fresh coriander
-
2.5ml/1/2 pepper
-
5ml/1 5sp cumin
seeds
-
2.5ml/1/2 tsp
ground turmeric
-
1.5ml/1/4 tsp
gourd red chili
-
salt
-
900g/2 lb
boneless lamb, cubed

30ml/2 tbsp oil
Method:
-
Puree all the ingredients
except the meat and oil to a paste. Pour over the
meat and leave to marinade for 1 hour.

Thread the meat on to metal
skewers and grill for about 15 minutes, turning
and basting with oil occasionally, until the
meat is cooked to your taste. Serve not with
mint chutney.
