Lamb Recipes - Chops with Spices and Vinegar

Ingredients

  • 225 g/8 oz canned tomatoes

  • 75 ml/5 tbsp wine vinegar

  • 4 large cloves garlic

  • 2.5 cm/1 in ginger root, coarsely chopped

  • 1 large onion, coarsely chopped

  • 10 ml/2 tsp ground coriander (cilantro)

  • 5 ml1/ tsp garam masala

  • 2.5 ml/1/2 tsp ground red chili

  • salt

  • 500 g/18 oz lamb chops

  • 60 ml/4 tbsp oil

Garnish:

  • 1.5 ml/1/4 tsp garam masala

  • 15 ml/1 tbsp chopped fresh coriander (cilantro)

  • 1 small green chili, chopped


Method:

  1. Blend the tomatoes, wine vinegar, garlic, ginger and onion to a smooth paste. mix in the ground spices and salt then rub the mixture over the chops and leave to marinate for 3-4 hours.

  2. Place the chops and marinade in a heavy based pan and cook over a medium heat for 20 minutes. Remove the chops from the pan and set aside.

  3. Continue to cook the marinade until all the liquid has been absorbed. Remove from the heat and rub the cooked marinade wove the chops.

  4. Heat the oil and fry the chops over a medium heat until cooked through and golden brown. Sprinkle over the garnish and serve hot with vegetable pulao, dal and raita.
