Curried Leg of Lamb
Ingredients
15ml/1 tbsp coriander seeds
30 dried red chilies
pinch of saffron
1 sprig fresh curry leaves
15ml/1 tbsp garam masala
50g/2 oz/1/4 cup desiccated
(shredded) coconut
50g/2 oz/1/2 cup blanched
almonds
50g/2 oz cup raisins
5cm/2 in ginger root
6 cloves garlic
5cm/2 in green papaya
50ml/1/4 pt/2/3 cup natural
(plain) yoghurt
salt
juice of 1 lemon
1 leg of lamb
100g/4 oz/1/2 cup ghee
Method:
Grind together the coriander
seeds, chilies, saffron, curry leaves and garam
masala. Grind together the coconut, almonds and
raisins.
Grind together the ginger,
garlic and papaya and mix with the yoghurt, salt and
lemon juice. Cut gashes all over the surface of the
lamb. Spread the yoghurt mixture over the lamb and
leave to marinate for 10 minutes.
Spread the coriander mixture
over the lamb then spread over the almond mixture.
Heat the ghee in an ovenproof pan and fry the lamb
until lightly browned on all sides.
Cover the pan and cook in a
preheated oven at 200C/400F for about 45 minutes
until the meat is reddish-brown and tender. Serve
with roast potatoes and rotis.
