Lamb Recipes -
Lamb with Beefroot
Ingredients
-
675g/1 1/2 lb lamb, cubed
-
450g/1 lb beetroot (red beefs)
-
90ml/6 tbsp oil
-
3 onions, sliced
-
2.5cm/1 in ginger root, chopped
-
3 cloves garlic, crushed
-
15ml/1 tbsp ground coriander
-
5ml/1 tsp ground cumin
-
5ml/2 tsp ground turmeric
-
750ml/1 1/4 pts/3 cups water
-
2.5ml/1/2 tsp chili powder
-
5ml/1 tsp garam masala
Method:

Trim the meat and trim dice the
beetroot. Heat 75ml/5 tbsp o the oil and fry the
onions until golden. Add the ginger and garlic and
fry until lightly browned.

Stir in the coriander, cumin
and turmeric and fry for 3-4 ,minutes, stirring. Add
the meat and fry for about 15 minutes until lightly
browned.

Remove the meat from the pan.
Stir in the beetroot and fry for 2 ,minutes,
stirring, adding a little more oil if necessary. Add
the water and bring to the boil then simmer for
20-25 minutes.

Return the meat to the pan with
the chili powder, cover and simmer for about 1 hour
until the meat is tender, adding a little more water
if necessary.

Stir in the garam masala and
simmer for about 10-15 minutes until the liquid has
evaporated.
