Lamb Recipes - Lamb chili Fry

Ingredients

  • 90 ml/6 tbsp ghee

  • 20 dried red chilies

  • 45 ml/3 tbsp coriander ( cilantro) seeds

  • 10 cloves garlic, sliced

  • 10 cm/4 in ginger root, sliced

  • 4 onions, sliced

  • 6 cloves

  • 6 cardamom pods

  • 1 cinnamon stick

  • 675 g1 1/2 lb boned lamb, cubed

  • 5 ml/1 tsp ground turmeric

  • salt

  • 300 ml1/2 pt/1 1/4 cups natural (plain) yoghurt

  • juice of 1 lemon

  • 15 ml/1 tbsp chopped fresh coriander (cilantro)


Method:

  1. Heat 15ml/1 tbsp of ghee and fry the chilies until dark the remove from the pan. Using a little more ghee each time, fry the coriander seeds garlic and ginger separately and set aside.

  2. Heat the remaining ghee in a large pan and fry the onions until golden brown. Drain and set aside. Add the cloves, cardamom pods an cinnamon to the ghee and fry for 1 minute.

  3. Add the lamb, turmeric and salt, cove and simmer for abut 20 minutes, stirring occasionally, until the meat is half-cooked. Add the yoghurt, lemon juice and fried spices until the meat is tender, stirring occasionally and adding a little water if necessary.

  4. Stir in the onion slices and simmer for 2 minutes then garnish with the coriander and serve hot with rice, chapattis and vegetables.
