Lamb Recipes - Lamb Chops Dopiaza

Ingredients

  • 45ml/3 tbsp oil

  • 2.5ml/1/2 tsp ground cumin

  • 1-2 green chilies, seeded and chopped

  • 5ml/1 tsp sugar

  • 5 onions, sliced

  • 5cm/2 in ginger root, ground

  • 6 cloves garlic, crushed

  • 4 large lamb chops

  • salt and pepper

  • 30ml/2 tbsp white wine vinegar

  • 250ml/8 fl oz/1 cup water


Method:

  1. Heat the oil in a heavy based pan and fry the cumin and chilies for a few seconds. Add the sugar and fry for a few seconds. Add 3 onions and fry until golden.

  2. Stir in the ginger and garlic and fry until browned. Add the chops and fry until browned on both sides. Add the salt, pepper, wine vinegar and water, stir well and bring to the boil.

  3. Cover and simmer for about 40 minutes until the chops are tender. Add the remaining onions, cover and simmer for a further 20 minutes. Serve immediately with rice and aborigines.
