Lamb Curry
Ingredients

75g/5 tbsp ghee or oil
-
2.5ml./1/2 tsp fenugreek seeds

2.5ml/1/2 tsp cumin seeds

3 large cloves garlic, crushed

2 onions, finely chopped
-
2.5ml/1 in ginger root, chopped

4 cloves
-
4 black peppercorns
-
2 bay leaves
-
1,5cn.1 in cinnamon stick

500g/18oz boned lamb, cubed
-
5nl/1 tsp ground coriander
-
25ml./1/2 tsp ground roasted
cumin
-
2.5ml/1/2 tsp ground red chili
-
2.5ml/1/2 tsp ground turmeric

salt
-
300ml/1/2 tsp/1 1/4 cups water
Garnish:
2.5ml/1/2 tsp garam masala
15ml/1 tbsp chopped fresh coriander
1 small green chili, chopped
Method:

Heat he ghee or oil in a heavy
based pan and fry the fenugreek and cumin seeds
until browned. Add the garlic, onions, ginger rand
whole spices until golden. Add the meat and fry for
5 minutes.

Stir in the ground spices, salt
and 45ml/3 tbsp or water and fry until the water has
been absorbed and the ghee appears on the surface.

Add the remaining water, bring
to the boil then cook over a medium-low heat for 20
minutes until the meat is tender, stirring
occasionally.

Sprinkle with the garnish
ingredients and serve hot with chapattis,
cauliflower, rice and ratita.
