Lamb Recipes -
Lamb with Saffron
Ingredients

900g/2 lb lean lamb, cubed

3 cloves garlic, chopped
-
1 cm/1/2 in ginger root,
chopped
-
2l5ml/1/2 tsp ground cumin
-
1.5ml/1/4 tsp chili powder
-
1.5ml/1/4 tsp black pepper
-
pinch of ground cinnamon
-
90ml/6 tbsp oil
-
pinch of saffron
-
250ml/8 fl oz/1 cup warm water
-
4 onions, sliced
-
5ml/1 tsp ground coriander
-
15ml/1 tbsp chopped fresh
coriander
-
45ml/3 tbsp lemon juice
Method:

Place the meat in a bowl and
rub in the garlic, ginger, cumin, chili powder an
pepper. Stir the cinnamon into the oil, pour over
the meat, add the saffron and marinate for 3 hours.

Transfer the meat to a heavy
based pan and add the water. Bring to the boil.
cover and simmer for about 30 minutes until the meat
is tender. Remove the meat from the pan.

Add the onions and ground
coriander and simmer until the onions are soft and
the sauce slightly thickened. Return the meat
to the pan, sprinkle with coriander rand return to
the boil. Cover an simmer gently for 15 minutes.

Stir in the lemon juice and
simmer for 1 minute before serving.
