Lamb Recipes - Lamb Sindhi

Ingredients

  • 450g/1 lb lamb, cubed

  • 2 onions, sliced

  • 2 tomatoes, skinned and sliced

  • 6 cloves garlic, chopped

  • 300ml/1/2 pt/1 1/4 cups natural (plain) yoghurt

  • 3 cardamom pods

  • 6 cloves

  • 2.5ml/1/2 tsp garam masala

  • 2.5ml/1/2 tsp ground turmeric

  • salt

  • 30ml/1 tbsp ghee


Method:

  1. Place the lamb, onions, tomatoes and garlic in a heavy based pan then stir in the yoghurt. Add all the spices mix well and leave to stand for 30 minutes.

  2. Stir the ghee into the pan, cover and seal tightly so that the steam cannot escape.

  3. Place on a medium heat and cook for 2 ours until the meat is very tender.
