Lamb Recipes - Lamb-stuffed Marrow

Ingredients

  • 1 large marrow (squash)

  • 1 cinnamon stick

  • 30 ml/2 tbsp ghee

  • 1 onion, chopped

  • 1 clove garlic, chopped

  • 2.5 cm/1 in ginger root, chopped

  • 1 green chili, chopped

  • 225 g/8 oz minced (ground) lamb

  • 2 tomatoes, skinned and chopped

  • 2.5 ml/1/2 tsp ground turmeric

  • 2.5 ml/1/2 tsp garam masala

  • salt

  • 10 ml/2 tsp chopped fresh coriander ( cilantro)


Method:

  1. Cut the marrow in half lengthways and scoop out the seeds. Cook in boiling water with the cinnamon for about 10 minutes then drain. Heat 30 ml/2 tbsp of ghee and fry the onion, garlic, ginger and chili for 1 minute.

  2. Add the lamb and fry for 5 minutes. Add the tomatoes and turmeric and simmer over a very low heat until the meat is tender, adding a little water if. necessary.

  3. Sprinkle with garam masala and salt. Fill the marrow with the meat mixture then tie the halves together with string.

  4. Coat lightly with butter then bake in a preheated oven 180°C/350°F/gas mark 4 for 20 minutes until crisp and brown. Garnish with coriander and serve with fried onions.
