Lamb Recipes - Lucknow-style Shami Kebabs

Ingredients

  • 900 g/2 lb minced (ground) lamb

  • 2 onions, chopped

  • 100 g/4 oz/ cup yellow split peas

  • 10 black peppercorns

  • 2.5 cm/1 in cinnamon stick

  • 6 black cardamom pods

  • 8 cloves

  • 4 bay leaves

  • 2.5 cm/1 in ginger root, chopped

  • 10 cloves garlic, chopped

  • 3 dried red chilies

  • 675 ml/1 1/4 pts/3 cups water

  • 5 ml/1 tsp garam masala

  • salt

  • oil for frying


Method:

  1. Blend all the main ingredients except the oil and simmer for about 25 minutes until the meat is tender, stirring occasionally.

  2. Drain and discard the liquid and leave to cool. Remove and discard the cardamom skins. Blend the mixture then shape into flat patties.

  3. Fry in a lightly greased pan for about 15 minutes on each side until browned.
