Lamb Recipes - Lucknow-style Shami
Kebabs
Ingredients

900 g/2 lb minced (ground) lamb
-
2 onions, chopped
-
100 g/4 oz/ cup yellow split
peas

10 black peppercorns
-
2.5 cm/1 in cinnamon stick

black cardamom pods
-
8 cloves
-
4 bay leaves
-
2.5 cm/1 in
ginger root, chopped

10 cloves garlic, chopped

dried red chilies
-
675 ml/1 1/4 pts/3 cups water

ml/1 tsp garam masala

salt

oil for frying
Method:
-
Blend all the main ingredients
except the oil and simmer for about 25 minutes until
the meat is tender, stirring occasionally.

Drain and discard the liquid
and leave to cool. Remove and discard the cardamom
skins. Blend the mixture then shape into flat
patties.

Fry in a lightly
greased pan for about 15 minutes on each
side until browned.
