Moghlai Shami Kebabs
Ingredients
45ml/3 tbsp ghee
10ml/2 sp garam masala
2.5ml/1/2 tsp ground turmeric
4 green chilies, chopped
2.5ml/1/2 tsp chopped ginger
root
5 cloves garlic, chopped 2
onions, chopped
350g/1 lb minced (ground) lamb
15ml/1 tbsp gram flour
15m/1 tbsp lemon juice
salt
3 hard-boiled eggs, chopped
1 onion, cut into rings
1 lemon, sliced
Method:
Heat 15ml/1 tbsp of the ghee
and fry the spices and 1 onion for 3 minutes. Add he
meat and fry for 10 minutes. Stir in the flour,
lemon juice and salt.
Turn the mixture out to cool
then grind it to a fine paste. Mix together the
remaining onions wit the eggs. Shape the mat mixture
into cutlets with a spoonful of onion and egg
mixture in the centre.
Heat the remaining ghee and fry
the cutlets until golden brown on both sides. Serve
hot with onion rings and lemon slices.
