Lamb Recipes - Nargisi Kebabs

Ingredients

  • 500 g/18 oz minced (ground) lamb

  • 30 ml/2 tbsp ground poppy seeds

  • 15 ml/1 tbsp chopped fresh coriander (cilantro)

  • 15 ml/1 tbsp natural (plain) yoghurt

  • 5 ml/1 tsp garam masala

  • 3 large cloves garlic, crushed

  • 1.5 cm/1/2 in ginger root, coarsely chopped

  • 1 onion, coarsely chopped

  • 1 egg, beaten

  • salt

  • 10 hard-boiled (hard-cooked) eggs

  • oil for deep-frying

Garnish:

  • 2.5 ml/1/2 tsp garam masala

  • 15 ml/ 1 tbsp chopped fresh coriander ( cilantro)

  • 1 small green chili, chopped


Method:

  1. Blend all the ingredients except the hard-boiled eggs and oil to a smooth paste. Divide into 10 31ual portions. Using oiled hands, shape the meat around the hard-boiled eggs.

  2. Heat the oil and fry the koftas until golden brown on all sides. Remove with a slotted spoon. Sprinkle with the garnish and serve hot with chutney and vegetable pulao.
