Lamb Recipes - Potato Fried Chops

Ingredients

  • 500 g/18 oz lamb chops

  • 4 large cloves garlic, crushed

  • 2.5 cm/1 in ginger root, finely chopped

  • 1 onion, finely chopped

  • 1 small green chili, finely chopped

  • 30 ml/2 tbsp chopped fresh coriander (cilantro)

  • 15 ml/1 tbsp ground coriander ( cilantro)

  • 5 ml/1 tsp garam masala

  • 5 ml/1 tsp ground roasted cumin

  • 1.5 ml/1/4 tsp ground red chili

  • 200 ml/7 fl oz/ scant 1 cup water

  • salt

Coating:

  • 225 g/8 oz mashed potatoes

  • 15 ml/1 tbsp chopped fresh coriander (cilantro)

  • 2.5 ml/1/2 tsp garam masala

  • 1.5 ml/1/4 tsp ground red chili

  • 30 ml/2 tbsp oil

  • 1 egg, beaten


Method:

  1. Place the chops, garlic, ginger, onion, chili, coriander, ground spices, salt and water in a heavy based pan and bring to the boil. Cover and simmer over a medium-low heat for 20 minutes.

  2. Remove the lid and increase the heat to dry off any remaining water. Push the meat and spices up the bones to leave about 2.5 cm/1 in of clean bone.

  3. Mix together the coating ingredients and press around the chops, leaving the top of the bone clear. Heat the oil in a frying pan.

  4. Dip the chops in beaten egg and fry until golden brown on both sides. Serve hot with chutney or a meal with pulao, chapattis, dal and a potato-bean dish.
