Lamb Recipes - South Indian Fried Lamb

Ingredients

  • 45ml/3 tbsp ghee

  • 3 onions, sliced

  • 1 sprig fresh curry leaves

  • 2 springs fresh coriander, chopped

  • 4 cloves garlic, chopped

  • 2.5cm/1 in ginger root, chopped

  • 450g/1 lb lamb, cubed

Spices:

  • 10ml/2 tsp cumin seeds

  • 5 fried red chilies

  • 6 cloves

  • 1 cinnamon stick

  • 5ml/1 tsp aniseeds

  • 5ml/1 tsp ground turmeric

  • pinch of mustard seeds


Method:

  1. Heat the ghee and fry the onions and curry leaves until golden. add the coriander, garlic and ginger and fry until browned. Grind all the spices together then add the m to the pan, adding a little water if necessary so that they do not brown.

  2. Add the lamb and fry for several minutes. Add just enough water to cover the meat, bring to the boil then cover and simmer for about 45 minutes until the meat is tender.

  3. Remove the lid and continue to simmer until almost all the water has evaporated and the sauce is thick.
