Lamb Recipes - Tamarind Chops

Ingredients

  • 1 small ball of tamarind

  • 450 g/1lb lamb chops

  • 15 ml/ 1 tbsp ghee

  • 8 onions, halved

  • 1 large potato, halved

  • 6 green chilies, slit

  • 2.5 ml/1/2 tsp mustard

  • salt


Method:

  1. Soak the tamarind in a little water for 5 minutes then extract the juice. Place all the remaining ingredients in a heavy based pan and add just enough water to cover.

  2. Bring to the boil then simmer gently over a medium heat  about 1 hour until the meat is tender. Add the tamarind juice and simmer for a further 5 minutes. Serve with Nan bread.
