Poultry Recipes - Barbecued Chicken

Ingredients

  • 5cm/1 in ginger root, chopped

  • 10 cloves garlic, crushed

  • 1 onion, chopped

  • 300ml/1/2 pt/1 1/4 cups natural (plain) yoghurt

  • 1 chicken, skinned and cut into portions

  • 10m/2 tsp chili powder

  • 5ml/1 tsp cumin seeds

  • salt

  • 150ml/1/4 pt/2/3 cup lemon juice

  • 45ml/3 tbsp butter, melted

  • 5ml/1 tsp garam masala

  •  1 lemon, sliced

  • 1 onion, sliced into rings

Seasoning:

  • 1 cinnamon stick

  • 1 bay leaf

  • 8 cloves

  • 7 black peppercorns

  • 3 cardamom pods


Method:

  1. Grind together the ginger garlic and onion and blend to paste with the yoghurt. Rub over the chicken and leave to marinate for 5 hours.

  2. Grind together al the seasoning ingredients then mix with the chili powder, cumin sees, salt and lemon juice. Make a few slashed on each chicken piece and smear wit the mixture. Leave to stand for 1 our.

  3. Brush the chicken with melted butter and barbecue or grill for about 30 minutes until cooked through and browned, turning frequently.

  4. Sprinkle with garam masala and serve garnished with lemon slices and onion rings.
