Poultry Recipes - Barbecued Chicken
Ingredients
5cm/1 in ginger root, chopped
10 cloves garlic, crushed
1 onion, chopped
300ml/1/2 pt/1 1/4 cups natural
(plain) yoghurt
1 chicken, skinned and cut into
portions
10m/2 tsp chili powder
5ml/1 tsp cumin seeds
salt
150ml/1/4 pt/2/3 cup lemon
juice
45ml/3 tbsp butter, melted
5ml/1 tsp garam masala
1 lemon, sliced
1 onion, sliced into rings
Seasoning:
1 cinnamon stick
1 bay leaf
8 cloves
7 black peppercorns
3 cardamom pods
Method:
Grind together the ginger
garlic and onion and blend to paste with the
yoghurt. Rub over the chicken and leave to
marinate for 5 hours.
Grind together al the seasoning
ingredients then mix with the chili powder, cumin
sees, salt and lemon juice. Make a few slashed on
each chicken piece and smear wit the mixture. Leave
to stand for 1 our.
Brush the chicken with melted
butter and barbecue or grill for about 30 minutes
until cooked through and browned, turning
frequently.
Sprinkle with garam masala and
serve garnished with lemon slices and onion rings.
